Final Score: Hannah 1, Mom/Dad 0

This has been a pretty trying week for Mark and I. Hannah has always been a pretty good eater, but lately she's been refusing to eat pretty much everything but cheese. For some reason it really stresses us out! I worry that she's not getting all the vitamins and nutrients that she needs. We've had 3 nights of flat-out, knock-down, hissy fits over dinner. It's not like I'm trying to feed her liver and onions! She won't eat any of her old favorites like bananas, pineapple, etc. She won't even eat the off-brand cheerios for breakfast! If anyone has suggestions for quick kid-friendly and healthy meals, we would love to hear your suggestions!

Mark has made this Tiramisu the past two weeks and we both really like it. It's not the "real" thing like Maggiano's, but it's a pretty good alternative! I'll never lose those last 5 pounds if he keeps making it every week! Give it a try if you feel the need to give in to your sweet tooth:

1 80z pkg cream cheese, softened
3 cups cold milk
2 3.4oz pkgs vanilla instant pudding
1 8oz tub cool whip, thawed
1 or 2 boxes vanilla wafers
1/2 cup strong brewed coffee (we liked espresso from Starbucks), cooled
2 squares Baker's semi-sweet chocolate, grated

Beat cream cheese with mixer until creamy. Beat in milk and pudding mixes. Stir in 2 cups cool whip. Line 2 1/2 quart bowl with vanilla wafers and drizzle with 1/4 cup coffee/espresso. Top with half each of pudding mixture and grated chocolate. Repeat layers. Top with remaining cool whip and chocolate. Refrigerate 2 hours. ENJOY!

I wish I could say that I was preparing these fabulous healthy meals for Bo, but on most days he eats chicken, hamburgers, spaghetti or a little of whatever we're eating for dinner and some baby food. Baby food has kind of been our saving grace, especially when he gets tired or fussy (possibly because of his teeth and not wanting to chew anything). Is she cutting any new teeth or not feeling well? Does she seem extra tired around dinner time or is she waking up earlier in the morning because she is hungry? Is she eating much at daycare? Maybe she's just not doing as much growing now and does not need as much to eat. I get so worried when Bo doesn't eat a whole lot, but supposedly they will eat as much as they need and the best thing that we can do is give them a couple of healthy options and encourage them to eat those. If she's still not eating much throughout the day after another day or two, I'd visit your pediatrician just to be sure there isn't something else going on. She's a little girl anyway so she definitely needs to be eating lots. Bo can come over any time to show her how big and full a toddler's tummy can be after a meal. :)

Hi Friend! Um, well if you've seen Ella lately, you know she usually finishes her plate being OVER 25 POUNDS!! However, she totally goes on those weird food strikes from time to time. Something she really likes though and I will give it to her for bfast, lunch OR dinner, is a whole wheat english muffin with jimmy dean's turkey sausage and some cheese...just melt it all together and she loves it. My ped. also said I could start giving her a half of a gummy flinestone vitamin and she loooooves that! maybe you could try that just to make sure she is getting her nutrients!

I know this is kind of controversial, but I hide veggies in my girls' food. I stress over them getting nutrients too and I'm big on getting vitamins from real food in addition to liquid vitamin. Since Mckinley will pick English peas out and things like that I started grinding vegetable up in the baby food grinder and then mixing them in. Then they can't pick them out! I'll grind up carrots and put it in mac-n-cheese, I'll grind up green beans or English peas and spread it on the bread of a grilled ham and cheese sandwich, like it's butter. It's just an idea!
